Holiday Menu, Recipe 3 - Duck Fat Roast Potatoes:

Busy Mom Hack: Ready-made Woolies roast potatoes, jazzed up with my secret weapon, duck fat! And of course, Woolies frozen roast potatoes because nobody has time to sit and peel a whole bag of spuds.

Puts the magic back into the Christmas menu essential roast potatoes!

 

Ingredients:

1 x bag of frozen roast potatoes

1 x tub of duck fat

Himalayan salt

Fresh rosemary

 

Instructions:

1. Heat oven to 180 degrees

2. Place frozen potatoes into a deep roasting dish (I love Scanpan’s range)

3. Liberally coat the spuds in a generous helping of duck fat.

4. Season with salt and a few sprigs of rosemary.

5. Leave for 35 minutes, turning at halfway.

6. Serve immediately.
